Garden Feta Cheese Tacos



What you will need:

Whole grain wraps ( My favorite organic wraps are "Joseph's," but i have only found them at Cub and Lund's foods. (They are usually located by the deli)
1 avocado
1 packet of yellow rice
1 can of black beans
Cherry tomatoes
1 small lime
1 small onion
Feta cheese

I like to put the rice on the bottom and garnish with black beans, onions, cherry tomatoes, avocado, feta cheese, and finish with a squeeze of fresh lime juice. These are so tasty and healthy! You could always add chicken or beef to it as well, if your man complains about no meat ;)

Yummy Cabbage Lasagna



                                                                                                                                                                    


What you will need:

1/2 a head of green cabbage cut into strips
2 cups browned hamburger
1/2 of an onion chopped up
1 can diced tomatoes
1 jar of your favorite tomato sauce
1 1/2 cup shredded mozzarella cheese
1 tsp garlic salt
1/2 tsp pepper
2 tsp oregano
1 tsp minced garlic (optional)

Directions:

Steam Cabbage strips till they are slightly tender, while waiting for the cabbage, heat oven to 350 degrees. In a glass casserole dish place 5-6 pieces of cabbage on bottom of dish, layer hamburger, onion, and mozzarella on top. In a large bowl combine diced tomatoes, tomato sauce, garlic salt, pepper, oregano, and minced garlic together, pour half of mixture on top of your layered lasagna. Repeat layers, and finish with some sprinkled mozzarella on top. Cover with tin-foil and bake 30 minutes, or till cheese is sizzling or brown on top. This is a nice substitute for noodles if your looking for a healthier dinner choice. Serves 4-5 people. Enjoy!
